Arman Liew’s Clean Snacks: Paleo Vegan Recipes with Keto Options (2019, The Countryman Press), is filled with accessible, easy, healthy recipes that fit into a number of restrictive diet regimens like gluten-free, vegan, paleo and/or keto.

Recipe developer and Instagram celebrity, Liew (@TheBigMansWorld) created a book for hosts and hostesses who stress about making sure that everyone they invite over has something to eat. 

Recipes include: Sweet Potato Pizza Crust, Baked Curly Fries, Chocolate Coconut Bars, Easy Keto Oatmeal, Orange Coconut Macaroons, New York Keto Cheesecake and more.

Baked Veggie Chips

This colorful savory snack  uses up all those delicious root vegetables. Ready in less than 45 minutes, they can be seasoned any way you like.

 

1 medium golden beet

1 medium beet

1 large carrot 

1 large sweet potato

1 medium turnip

1 tablespoon avocado oil

Salt and pepper, to taste

 

You can change up any of the root vegetables, but be aware that cooking times will differ. Sweet potatoes will need a longer cooking time versus beets. 

Preheat oven to 400°F. Line a large baking tray with parchment paper and set aside.

Using a mandoline or knife, slice the root vegetables into thin slices.

Place them into a large mixing bowl, add the avocado oil and seasonings and mix to coat the vegetables.

Spread vegetables in a single layer, minimizing any overlap.

Bake 10-12 minutes, before flipping and baking for another 10 minutes, or until crispy. 

Remove from oven and allow to cool completely. 

Makes four servings.
