2 egg whites
1/4 cup butter, softened
1 cup sugar
1-1/2 cups mashed ripe banana
1/2 cup low-fat plain yogurt
1 teaspoon vanilla extract
3/4 cup flour
3/4 cup oatmeal, ground fine
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
Preheat oven to 325°F. Spray a 10-inch-by-15-inch pan with nonstick cooking spray. Set aside.
In a metal or glass bowl, beat egg whites to stiff peaks. Set aside.
In a large bowl, beat together butter and sugar, add mashed banana and beat thoroughly. Add yogurt and vanilla, beat well.
Combine flour, oatmeal, baking soda and salt, quickly combine with banana mixture. Fold in beaten egg whites until no streaks of white remain. Fold in chocolate chips. Spread evenly in prepared pan.
Bake about 35 minutes. When done, the top will spring back when pressed lightly with a finger. Cut into rectangular bars, about 1-1/2 inches by 3-1/2 inches. (Cut the long side into four pieces, and the short side into seven pieces.)
